Our friends Sam, Hector, Arthur and Matthew Guinness have launched Four Brothers Cheese, an artisan cheese business next to Biddesden Dairy on the Hampshire-Wiltshire border. Pippin, the first cheese produced by the new cheesemakers, is a brandy-washed soft cheese with a unique flavour owing to the combination of the rich Ayrshire milk a French-style cheese making technique. The cheese takes its name from one of the cows in the high-welfare pasture-fed herd of Biddesden Farm, next door to which the cheese is made.
The second cheese, Bryony, is a feta-style fresh cheese packaged in a glass and suspended in Duchess Cold Press Rapeseed Oil. The Bryony is the only feta-style cheese made from Ayrshire milk in the world.
